An eye-catching taste path, games of textures and bright colors in the dish, the 7-course tasting menu (4 appetizers, a first, a second and a dessert) that I tasted in the dehor of the restaurant VIVA of chef Viviana Varese I really liked and left me with the desire to come back to taste other dishes! In addition, the ability to eat at large round tables outdoors, illuminated by many lights hanging from the tents, surrounded by plants that create an oasis in the crowded square XXV April, makes the experience even more exciting. Original idea of placing the open-air kitchen inside a caravan: those at the table can spy on the preparation of the courses! Four fish starters, decided start with oyster with centrifuge of cucumber, green apple and passion fruit. Subsequent dishes, in order of presentation, were my favorites. Amber ceviche with tomato paste, raspberry and onion in agro Tuna carpaccio with roasted tomato vinaigrette, capers, olives and kumquat Cuttlefish noodles with crushed potato, citrus and ginger (an exquisite saucer, tasty but well balanced with a good sour note of citrus, I didn't want to finish it). First dish: 7 rebirth. Risotto cacio and 7 nuggets with fermented Amalfi lemon, creamy and spicy Cod confit on tomato paste, bruschetta and basil ice cream (beautiful colors, very good cod, fun play of crispy textures-soft and cold-hot)
Conclusion with the sweet 'Sun': revisiting the Neapolitan pastry!
