What an elegant and refined experience you can live at the restaurant Seta of the Chef Antonio Guida, a two Michelin star in Milan welcomed in the exclusive Mandarin Oriental Hotel near the fashion quadrilateral in the centre of the city. Getting inside the Mandarin Oriental the atmosphere allows you to feel a privileged guest; after passing the bar you enter the rooms of the restaurant that have a discreet elegance. My table overlooks the inner courtyard where in summer you can dine in the outside and, reminders for the future, it must be an opportunity to feel even more in a very unique location. I must thank the head Sommelier of the restaurant, who as soons as he heard that I am attending the course to become a Sommelier (so a possible future colleague), he brought me two really fantastic wines to taste, two pearls that I will not forget easily, they certainly belong to the best wines I have tasted to date. Before starting the tasting of a short two-course menu I was served a small welcome with a presentation of two variations of the same vegetable, the potato: in a bowl of baked potato cubes with thyme and in the second one a potato cream with bergamot and licorice. Two small jewels, wonderful at the sight and on the palate, I would have eaten a whole dish of both! The first course is one of the most famous dishes of the Chef Antonio Guida, rice ‘in cagnone’ with vegetables, maccagno and raspberry powder. Amazing! As a second course, a fish dish, the morone with nutmeg, spinach and black truffle. The two desserts were very tasteful. The first, Mandarin stuffed with kumquats, chestnuts and ice cream with cocoa grue. The second a pear sorbet with kaki cream and white chocolate. A show! It continued the trend of elegance with the small pastry, really very fine in presentation and composition as well as very delicious to taste.
