In a place that lies in my heart, the Langhe, I had lunch today at Osteria Arborina. Opened in 2017, an award from the Espresso Guide in 2018 and a prestigious Michelin star a few months after opening, the restaurant offers a la carte menu and three tasting menus, one more traditional (the Atypical) and the other two (the Iconic and the Ostico) that offer more innovative dishes. Pleasant environment and very kind and attentive service, I was satisfied in the request to taste a different dish on my menu and I was also offered a dish outside the tasting path which I really enjoyed! Very well supplied the wine list, with the advice of the Sommelier I drank a Barolo Marasco of the Franco Martinetti winery, yummy and elegant, perfect in combination with all the courses. It starts with raw meat by Fassone from Piedmont, robiola di Roccaverano and noccIole, beautiful to see, overall very delicate and tasty dish. Plin agnolotti with two steps: typical local dish presented in two temperature variants, warm as tradition dictates and cold presented on ice. Interesting combination, in cold ones is definitely enhanced a 'crunchiness' of the dough and the flavor of the filling, in particular the presence of herbs. Both versions were very good, a pairing to remember! Butter tajerin with sunrise white truffle: miuch love for this plate!! Pharaoons with porcini mushrooms and sauces of walnuts and mushrooms and with porcini mushrooms lying on a soil of dried mushrooms .Surprise dish of the kitchen!
Subse deer bed, cabbage (great for challenging the intense aromatic and iron flavor of the meat), onion caramel and sweet potato chips. An incredibly good dessert: Tarte Tatin! Sablès biscuit, cinnamon cream, apple pink, caramel sauce
