In the heart of Florence, Georgofili Street, a short walk from Pontevecchio, there is a small and elegant restaurant, a Michelin star, which I recommend you try. You will find Italian cuisine and from Tuscany in particular, expressed in a gourmet key. Even the name itself, 'Air Hour', referring to a pleasant break from the work activities, confirms the expectations of an ideal place even for a lunch during the week. I particularly liked the table right next to the kitchen; in addition of being able to observe the work of preparing the dishes up close, there was also a pleasant light to admire the various courses. My choice fell on the menu 'Revolution - Tuscany Experience' or 5 small portions of typical regional dishes for a total cost of 40 euros. It starts with salted lime meringue, livers, liquorice: what a delight! Then we move on to the panzanella with over-the-top apple cider vinegar with basil oil, tomatoes and cucumbers: a real fresh taste and for me (super lover of panzanella!) was a really good start! The next dish is a true homage to the Tuscan culinary tradition, the ultra-pappa with tomato with basil ice cream: excellent contrast between cold ice cream and hot gruel and also the flavor of basil adequately balances the trend to sweet tomato gruel. Exquisite. Pappardelle with trawled beef sauce (as it used to be, that is, meat cut to knife and beaten with the meat beater), Parmigiano Reggiano seasoned 30 months. Great make-up of thick and rough pasta, the soft sauce that melts in your mouth with a magically more delicate flavor than I expected! Then comes a strong dish: steak Sabile's Style 100gr with Pure Masfini beans.
The Florentine steak is first spiced, then baked for 2 hours at 52 degrees and only then in the pan to create the crispy outer part, so it remains juicy and soft internally and evenly ('reverse searing'). Granny cake with vinsanto and almonds accompanied by sage ice cream. The ideal way to end a lunch in sweetness.
