My very first time at Immorale in Milan! Strong tastes, a kitchen characterized more by umami and smoked than by acidity and small details that almost reminded me of my travels in France: salted Normandy butter, creaminess, sauces and concentrated flavors. . First very interesting taste: grilled beans, cedar jam and pecorino romano. Dish that intrigued me despite not being passionate about 'burned' and smoked flavor, excellent contrast between bitter embers and flavor (and personality) of pecorino. . Following asparagus of Mezzago, pollen, nori seaweed, marja (general flavor of the dish with a sweet tendency, almost as if there were honey or hazelnuts!) and grilled artichoke, parsley, wild mint, garlic, lemon butter. Candles pasta with purple Mazara shrimp bisque and fennel. Mediterranean dish with concentrated flavors, overwhelming character that does not leave indifferent. . The risotto with carrots, charcoal sheep's milk and licorice is delicious but (to my taste) overall the smoked flavor of charcoal milk predominates a little too much, more balanced and appetizing the bites with a little carrots and licorice! Worthy of note is a good natural #vinobianco in combination, Le Tourbillon de la vie (Macabeo base), a fun wine, scented with flowers and fruits and with mineral hints that also return to the mouth with a pleasant savory finish.
