We are in Caluso, province of Turin, about 20 km from the Masino Castle and Park. If you have a visit around here I highly recommend a stop at this restaurant that I loved so much, one Michelin star, the Gradenia Restaurant! An authentic italian cuisine, exaltation of the territory, the Chef Mariangela Susigan will succeed expertly and always with a warm smile to lead you on a journey through genuine flavors and at the same time of character, with most of the freshly ingredients harvested in the garden adjacent to the restaurant. During summer you can eat outdoors in a small corner under the trees in a relaxed and bucolic atmosphere, you must try! We have chosen two different menus just to be able to taste different dishes: ‘Territory’ and ‘Orto’. Among the starters, don't miss the Microboled with head, tongue, hen, tip and sauces. ‘Orto’ is a delicious dish too with a significant name: colorful roots, land of sorghum, forest asparagus, emulsion of spruce and Tagete oil. Two interesting and tasty first courses. Plin with local chicken in their sauce with fine local herbs: good taste and strong flavor of the filling. Carnaroli Gran Riserva risotto with forest strawberries, robiola, nettles and spruce buds: very delicate even in the creaming, I would have only liked more strawberries because they make the dish fresher and... because they are so good! The quail as second, cooked in the clay of Castellamonte, Parietaria, Plantggine and raspberry: fun the expedient of making the client break the clay with a hammer and bring back the dish subsequently composed impeccably. Two desserts tasted and I found interesting and intense flavors!
Maggengo hay, cherries, blackcurrant, buckwheat: perhaps the hay is not enough pronounced but overall good and ultra abundant. ‘Spring in progress': Manjari chocolate, green apple, edible flowers, an explosion of chocolate with the acidity of the apple, a small masterpiece to see and taste!
