A new Michelin star in Milan and a recent farewell: almost two weeks ago I had the pleasure of having lunch at the Alchima Restaurant and then trying the cuisine of Davide Puleio (special award young Michelin chef 2020) before his collaboration with the restaurant was interrupted just a few days ago. A well-groomed environment, beautiful round tables with seats on high-backed sofas where I could sit. Small but charming cellar with a bulletin board full of bottles. Very pleasant tasting path, Italian cuisine with notes of delicacy even in preparations that could turn out to taste more decisive (such as the tail to vaccinara on the risotto), very satisfied by all the dishes, slightly under tone the dessert compared to the other courses. Incredibly greedy and balanced appetizer: roasted pumpkin, carrots, chestnuts and Castelmagno fondue, I would have gladly done the encore! . The famous Risotto Milano - Roma. A very good and interesting first course, a union of Italy in the celebration of the best known dishes of its two most important cities: Milanese risotto with a small portion of the vaccinara tail leaning on it, a combination that works definitely! For second lacquered pork ribs, grilled radicchio and hibiscus red cabbage, a delicious meat, soft and tasty, a really good dish.
As a dessert I wanted to try the Alchimia Tiramisu, a different-textured version of one of my favorite desserts: not bad but not something worthing somersaults. Overall positive experience, a nice memory, I will be curious to come back to appreciate the future any changes is still new dishes!
