There is a bistro cocktail in the Savona neighborhood in Milan, Carico, which literally conquered me. For the proposal of various types of dishes: from pickles and fermented (how good purple cabbage, jalapeño and sesame!), to 'spizzichi' (various types of croutons), from 'Bocconi' (small dishes that reveal a study of techniques and raw materials) to desserts (not at all conventional!). For the pairing with cocktails proposed in 'compact portion' (reduced portions), a very apt idea because you can taste several by combining them with various dishes, always at the right temperature and without the risk of getting bored with a single glass. And it is precisely the combination of dishes and cocktails that was the turning point of the evening, some combinations were absolutely harmonious and such as not to regret a good level of wine pairing. After the purple cabbage I start with an exquisite dish: Mazara red shrimp, bisque, chimichurri and crispy green beans, horseradish, perfectly combined with one of the cocktails I preferred, the French_75 (Tanqueray ten gin, cremant d'Alsace, citrus, sugar). Simply fantastic the pairing of tuna with sherry melon and Sake served nice fresh, every bite and sip together were pure magic! Also excellent is the combination of quinoa, butter, parmesan, oregano, ume gel and the Malus Blues cocktail (white left-handed vermouth, Johnnie Walker Black label whiskey, osmotic apple soda with grappa). A second dish of impact: Veal sweetbread, anchovy emulsion of Sciacca, tomato oil, Amaro lucano.
The end of dinner cheered by the dessert coconut milk, black sesame, saint germain plums. Well stocked Gin and Sakè card, for enthusiasts it is worth a visit alone! Congratulations to the guys at Carico, I can't wait to come back to taste more dishes and cocktails!
