If you pass by Bolgheri I suggest you book a dinner at Arduino Bolgheri. Nestled between the Tuscan hills and the sea, the products of the land grown on the farm become the protagonists of a 'Regenerative Farm to Table Experience'. The raw materials, which make up an entirely vegetarian menu, are thus enhanced by the fire (embers, smoking, under ashes, plancha) and by the creativity of two guys who bring to the table together with the dishes a great enthusiasm and passion for their work. And the result is seen and felt. The best of the kitchen came in my opinion in the preparations with fewer ingredients where the distinction of flavors and a fresh note that perhaps is a little missed (despite a vegetable menu) but overall I was pleasantly impressed by most of the dishes (6 courses plus small appetizers along the way), it's worth stopping to visit them and try the menu! 'Gold in the hen house': cream of potatoes cooked under ashes/mix of marinated and cooked seasonal vegetables on the bridge/chips of red spring onion and marinated egg yolk covered with a gold leaf (tribute to the important action of the hens on soil regeneration) . Risotto and aromatics: watercolor rice aged 7 years, broth of fresh aromatic herbs, fermented lemon, black garlic powders, carrot, beetroot and marjoram Onion cooked under ashes/smoked sour cream/caper leaves/kombucha elderberry granita. . Madeleine with olives/kimchi mayonnaise/confit tomato. Watermelon/friggitelli
