AQUA CRUA, BARBARANO VICENTINO

​A tasting path that is a surprise plate by plate.
A kitchen view room from which you can browse the careful work of the Chef Giuliano Baldessari and his guys.
High-level raw materials that become raw materials to make small spells.
Great pairing with very interesting wines.
All this was for me Acqua Crua, a rone Michelin Star estaurant near Vicenza in which I will return as soon as possible (next time to try the menu of the evolution of the chef's cuisine).

​On this occasion I chose the menu 'The Fractal’.
The fractal is a geometric element that repeats in the same way even on different scales: enlarging a part of it will always produce a figure similar to the original. So, in this menu, small segments that together have drawn the geometry of Aqua Crua, hold each part of its beginning.
 
It starts with a delicious small taste: squid and lambs hugged in a wafer.
Then come two white asparagus immersed in a pistachio cream.

​Here's a surprise you don't expect: two little rigatoni topped with rabbit sauce, but the rigatoni are actually two small creations based on cabbage turnip: fun game, amazing flavor.

​As first comes 'Chitarra': spaghetti with morchella powder, scallop and citrus scent, fantastic dish.
Another first dish not to be missed is the carnaroli rice mantecato with orange juice, ginger, chilli, parmesan and mussel water (no use of butter!): there is a delicious flavor of resin given by the silvered berry of grated cypress and lentil oil extracted from the resin of the plant, what a wonderful plate!

​As second dishes: lamb with lobster cream (pure delicacy and harmony of flavors) and the kid.

​The dessert then a real riot of emotions!
Charred cream (for the presence of charcoal) with lime peel, Polipodium root, coffee powder and citric acid.
Chef's point of view: by his own admission the aesthetic aspect of this dessert (as well as the uninviting name) wants to be deliberately 'ugly' to avoid any expectations of the customer, who will be ecstatic by the exquisiteness of this cream that contrasts strongly with its presentation.
Of an indescribable goodness!
